You can, and we highly encourage it. However, you won't gain access to previous days' Premium content (unless you had the Advent Calendar Auto-Gifter active). You can also still claim today's Premium gift by becoming a Premium Member, just remember to come back to the Advent Calendar to claim it before the day is over.
